By separating the stones from the fruit, it reduces the risk of substances from the stones getting into the brandy.

FERMENTATION

After preparing the fruits, ie. after muddling and mashing, the fruit pomace is inserted into the vessels for fermentation.

DISTILLATION

Distillation is the phase when all the richness of taste and aroma of previously fermented fruit is being transformed into brandy.

MATURATION

Brandy requires a certain aging in a barrel during which their aroma and taste develop and become more pronounced.
